Picnic Food Ideas πŸ§ΊπŸ‰πŸ₯―

The weeks are very busy and I therefore spend a few hours cooking on the weekend. Eli is loving picnics at the moment. I therefore make loads of snack food in bulk and freeze what I don’t need. I try and make sure the snack foods are protein rich and contain various fruits and vegetables πŸ₯• 🍎

Mini quiches (makes 12 - 5x2cm cases)

For the crust

80g shortcrust pastry- rolled out and cut into 12 discs

Add pastry to 12 greased mini muffin cases and bake for 10 mins (160c)

For the filling

Whisk together 3 eggs, 1 heaped tbsp cottage cheese, 30g chopped ham, 30g chopped broccoli, 50g grated cheese. Pour into pre-baked cases and top with a little extra cheese. Bake for 20 minutes.

Apple cake (makes 10 mini cakes - 5x2cm cases)

  • 1 apple (no skin) sliced very finely and cut into smaller discs

  • 1 egg

  • 40g self raising flour

  • 1/2 tsp cinnamon

  • 1/4 tsp baking powder

  • 20g melted butter

  • 40mls whole milk

  • 1 tbsp honey

Mix everything well and add to greased cases. Cook at 190c for 10 mins.

Cauliflower and cheese macaroni muffins (makes 8-10 - standard muffin size)

  • 150g blitz cauliflower (raw)

  • 70g cooked macaroni

  • 25g butter

  • 300mls milk

  • 100g grated cheddar

  • 60g breadcrumbs

Melt the butter and add the flour to make a roux. Add the rest of the milk slowly to make a sauce. Add the cheese, cauli and pasta and cook until quite dry. Add the breadcrumbs. Add to greased muffin tins and cook at 200c for 20 mins.

Sausage, broccoli and sweet potato frittata fingers (made 6)

  • 2 chipolata sausages, cooked and diced

  • 3 eggs

  • 40g grated cheddar

  • 1/2 sweet potato, cooked and diced

  • 4 broccoli florets, cooked and chopped

Whisk everything in a bowl. Add to log moulds. Cook at 160c for 15-20mins.
