Mini Pizzas
Mini pizzas are always a winner with kids! Why not make them healthy too? The dough is literally just mashed sweet potato, some flour, a pinch of salt and olive oil. You can be creative and use a 'rainbow’ of different veggies, to make it fun.
Ingredients for 10 mini pizzas
40g cooked sweet potato (mashed- no butter)
60g strong white flour
1 tbsp olive oil
1/6 tsp salt or pinch
10 ml water
Method
Mix everything together, but don't overwork. Roll out dough onto a floured surface. Use a cutter to cut out mini pizzas. Place in an oiled baking dish.
Prepare your toppings, we used: tuna, sweetcorn, sliced olives, roasted sliced peppers, basil, mozzarella and cheddar.
Top pizza bases with a little tomato puree, followed by your toppings of choice.
Bake in a hot oven (220c) for 15 mins, until the bases are completely cooked. These can be stored in the fridge for 3 days or frozen.
