Date and Pistachio Bites 💁
Eli loves dates — they are probably one of his favourite foods 😍
Although dates provide fibre and minerals, they are also naturally high in sugar. I therefore decided to combine them with nuts to create a more balanced snack.
Pistachios provide healthy unsaturated fats, fibre, and protein, as well as nutrients including vitamin E, potassium, and some iron.
These can also be a helpful snack option for children who struggle with constipation, thanks to their fibre content.
No added sugar needed!
Ingredients
120g dates (stones removed)
50g pistachios, or another nut
1tbsp almond butter
1tsp cinnamon
20g ground almonds
20g unsweetened shredded coconut
Method
Blend everything together. Roll out and cut into shapes.
This recipe made 8 adult size date balls and 10 mini bites for Eli. It can be easily halved or quartered.
