Salmon and Pea Croquettes ๐Ÿ ๐ŸŸ

Sometimes itโ€™s nice to make a quick, healthy meal without having to buy loads of fresh ingredients. I had a tin of salmon in the cupboard and some peas in the freezer, so I thoughtโ€ฆ why not make some croquettes? ๐Ÿ˜

The NHS recommends eating at least one portion of oily fish per week. Salmon is an excellent source of protein and omega-3 fats. Protein is essential for growth, while omega-3 fats support brain and eye development.

Mashing the soft bones into the fish also increases the calcium content.

Ingredients:

  • 100g mashed tinned salmon (with bones)

  • 100g buttery mashed potato (cooked)

  • 60g peas (defrosted)

  • 1 tbsp full fat cream cheese

  • 1 egg whisked

  • 60g crispy breadcrumbs

Method

  • Mix the salmon, potato, peas and cream cheese together.

  • Make croquettes (I made 8).

  • Dip each one into egg, followed by the breadcrumbs.

  • Cook in airfryer (190c) for 10 mins. Flip over halfway.

  • Delicious hot or cold and they can be frozen once cooked.

Very cost effective, as 8 Croquettes did us 4 meals!
