Lamb Kofta Lollipops

Koftas are super easy to make and are naturally soft in texture, mildly spiced, and full of flavour. Perfect for toddlers, picnics, or summer BBQs ☀️

Why I love them

Rich in protein and iron
Lamb is an excellent source of protein and provides iron, which is important for growth and development.

A great source of fibre
Butter beans provide fibre as well as extra protein, helping to make the koftas soft and nutritious.

Contains healthy fats and minerals
Tahini provides healthy fats and also contains calcium and iron.

Soft toddler-friendly texture
These are easy to hold, soft to chew, and great for little ones learning to enjoy new flavours.

Recipe (makes 8 koftas)

  • 300g minced lamb

  • 1/2 large onion, grated

  • 2 garlic cloves, crushed

  • 2 tsp breadcrumbs

  • 2 tsp cumin

  • 1 tsp coriander

  • 1/2 tsp smoked paprika

  • 1 handful of chopped mint and parsley

  • Pinch of salt

  • 8 bamboo skewers

Method

  • Cut off the sharp tip of the skewers and soak in warm water for 10 mins.

  • Mix all the above ingredients together. Thread mix onto skewers. Cook for 12 mins (200c). For small kids - remove koftas from the skewers.

Hummus

Now everyone likes hummus differently. This is the way I like it. Some may say it's a little garlicky. I like to use butter beans for my hummus (controversial, I know). Butter beans give this hummus a really creamy texture!

Ingredients

  • 1 tin of butter beans, drained

  • 1 garlic cloves, crushed

  • 3 tbsp tahini

  • 1/2 a large lemon, juice only

  • Salt to taste

  • Splash of water

Method

  • add everything to a blender and whizz until smooth

Salad

  • 1 large handful of chopped cherry tomatoes

  • 1 handful of pomegranate seeds

  • Olive oil
