Spiced Sweetcorn Ribs 🌽🌽🌽

These are delicious - mildly spiced, sweet and crispy. Sweetcorn is a source of fibre and provides some B vitamins, including folate, as well as small amounts of vitamin C. Corn ribs are a fun and tasty way to encourage vegetable intake in children!

Recipe

  • 1 corn on the cob - cut into 8 ribs

  • 1 tsp smoked paprika

  • 1/4 tsp cumin

  • 1/2 tsp onion powder

  • 1 tsp nutritional yeast

  • 20g butter, melted

Method

  • Marinade the corn ribs in spices, nutritional yeast, onion powder and butter.

  • Cook in the air fryer (205c - fry mode) for 7-10 mins, until cooked and crispy.

  • Alternatively, you could cook them in the oven (200c) for 20-25 mins.

  • I served mine with a homemade cream cheese and spring onion dip 🤤
