Mango Power Bites 🥭🥭🥭

I am constantly looking for healthy snacks that contain protein and are low in added sugar. These are the perfect little pick-me-up 😍

As you can see, they contain very few ingredients.

Why I love them

Peanuts and sunflower seeds provide protein, healthy fats, and fibre.

Dried fruit also contains fibre. Dried mango provides some vitamin C, while raisins contain small amounts of iron.

Naturally sweet with no added sugar or additives needed!

Ingredients (makes 12 bites)

  • 70g unsalted peanuts

  • 70g dried unsweetened mango - soaked for 5 mins (to soften)

  • 10 pitted dates

  • 15g sunflower seeds

  • 15g raisins

  • 15g shredded unsweetened coconut

Method

  • Once the mango has soaked. Squeeze out water.

  • Add all ingredients to a blender.

  • Blend the mixture until the nuts are in very small chunks.

  • Make 12 bites.

  • Sprinkle over some coconut.

Keep in an airtight container for 5 days. Alternatively, they can be frozen.
