Ham and Roasted Veg Frittata

I make frittata for Eli often as it’s nutrient-dense, easy to prepare, and perfect for picnics.
Eli has been quite fussy with vegetables at times. However, when I add them into a frittata, he happily eats and enjoys them.
Eggs are a highly nutritious food for children. They provide protein and healthy fats, and contain nutrients such as vitamin B12, iodine, iron, and vitamin D.
This frittata is high in protein, contains calcium from the cheese, and works well as a balanced meal when served with other foods.
Ingredients (makes 1 large frittata)
4 eggs, whisked
1 baking potato, diced and roasted
½ red pepper, chopped and roasted
1 onion, chopped and roasted
50g ham
100g full-fat cottage cheese
50g cheddar, plus 20g for topping
Method
Mix all ingredients together well.
Pour into a lined dish.
Sprinkle over the remaining cheese.
Bake at 200°C for 20 minutes, or until set and golden.
Delicious hot or cold.
Mini quiche option
Line mini muffin cases with ham. Add the mixture and bake at 200°C for around 20 minutes.
