Jammy Coconut and Almond Cookies 🍪

This week’s bake is flour-free and made with ground almonds and unsweetened desiccated coconut 😍

I am trying to include more nuts in Elias’s diet, and baking with ground almonds is such an easy way to do it.

Almonds provide healthy unsaturated fats, fibre, protein, and nutrients including vitamin E and calcium.

These cookies also contain much less added sugar than many traditional recipes.

These cookies also contain much less added sugar than many traditional cookie recipes — just 1 tbsp of honey in the mixture, with a small dollop of jam going a long way once baked!

Ingredients (makes 10 biscuits)

  • 80g ground almonds

  • 40g desiccated unsweetened coconut

  • 1 egg

  • 30g unsalted butter

  • 1/2 tsp baking powder

  • 1 tbsp honey

  • Jam

Method

  • Mix everything together.

  • Line a baking tray.

  • Divide mix into 10 cookies.

  • Bake at 160c for 14 mins.

  • Remove from oven and make a small indentation in the centre of each cookie.

  • Add a very small dollop of jam.

  • Return to oven for 2 mins.

Delicious! Last about 3-5 days in an airtight container. Alternatively, they can be frozen.
