Homemade Granola

We’re starting our busy weekend with some homemade nutty granola 🌰🥜

I blitzed some of the granola into a finer “nutty crumb” for Eli and mixed it into his rice crispies. He hasn’t had granola before, so this was a gentle way for him to try it.

I always thought granola was tricky to make, but I was proved wrong—it takes under 5 minutes to prepare, and we were eating it within the hour!

This granola is made with oats, almonds, shredded unsweetened coconut, raisins, and apricots. It provides fibre from the oats and dried fruit, and some protein and healthy fats from the nuts and seeds. It’s also lower in added sugar than many shop-bought versions.

Ingredients (makes 1 Kilner jar + 1 small jar)

  • 200g jumbo oats

  • 50g flaked almonds

  • 50g unsweetened shredded coconut

  • 50ml honey

  • 2 tbsp melted coconut oil

  • 50g raisins

  • 40g chopped dried apricots

  • 2 tsp cinnamon

Method

  1. Mix everything except the dried fruit together.

  2. Bake at 150°C for 20 minutes, stirring after 10 minutes.

  3. Add the dried fruit and stir through.

  4. Return to the oven for a further 5 minutes.

  5. Allow to cool completely before storing in jars.

Nutty, naturally sweet, and delicious (without being overly sweet) 🌰
