Fluffy Cottage cheese pancakes 🥞🥞

These make the perfect protein-rich breakfast for kids and parents! They’re quick to make and can be enjoyed hot or cold.

I use spelt flour, which provides fibre and contains protein, B vitamins, and iron.

Ingredients (makes 8–10 pancakes)

  • Oil for frying

  • 200g full-fat cottage cheese

  • 2 eggs

  • ½ tsp vanilla extract

  • 1 tbsp honey

  • 60g spelt flour

  • 1 tsp baking powder

Method

  1. Mix all ingredients together lightly until just combined.

  2. Heat a little oil in a frying pan.

  3. Cook pancakes for 1–2 minutes on each side until golden.

  4. Transfer to a hot oven (200°C) for 3 minutes to finish cooking through, if needed.

Serve with a drizzle of honey, fresh fruit, yoghurt, and granola. So simple and so delicious!
