Easiest Butternut Squash Risotto 🎃
I love risotto, but I rarely have time to make it anymore. I used to love standing over the stove, slowly cooking a risotto, whilst drinking a glass of wine 😂
This is a super simple seasonal recipe. It's cheesy, creamy and delicious. It is also a great weaning recipe! Adding lots of cheese makes it extra creamy.
Ingredients (makes enough for 2 adults and a child)
1/2 diced onion
2 garlic cloves (crushed)
100g arborio rice
100g cubed butternut squash or pumpkin (without skin)
1 low salt stock cube mixed with 400ml boiling water
Herbs of choice ( I used rosemary and a bay leave)
1 tbsp nutritional yeast flakes
2 tbsp full fat cream cheese
30g butter
At the end - 50g mature cheddar, plus extra for topping
Method
Add everything to a slow cooker. Mix well.
Cook for 2 hours (high heat).
You may want to cook it longer, if you want softer rice.
Add more water, if you like it less thick.
Delicious served with grated cheddar and vegetables! 🥒 🍅
