Courgette and Feta Tart 🥒🥒🥒
Courgettes are in season, so why not make a courgette tart?! Eli has started to refuse some solo vegetables, however if I add them to a tart / quiche and COVER it in cheese - he usually accepts it 😀
We try and eat as seasonally, as possible.
Seasonal fruit and veg is often:
Fresher
Potentially richer in nutrients compared to produce that’s been stored or imported long distances
Tastier
More affordable
Better for the environment, as it can reduce food miles, greenhouse gas emissions, and the need for long storage or preservatives

Recipe
1 packet of puff pastry
1 large courgette, sliced very thinly
1 garlic clove, crushed
1 tsp olive oil
2 tbsp pesto (I used my baba ganoush pesto - see recipe on page)
½ a block of crumbled feta
A good grating of parmesan
Method
Marinate the courgettes in the garlic and olive oil for 10 mins or so.
Roll out the pastry and crimp the edges.
Cover pastry in pesto, followed by the courgettes, followed by the cheeses.
Bake in the oven (200c) for approximately 20 mins, or until the base is fully cooked.
Delicious for picnics or Al fresco dining!
