Cheesy Rainbow Veg Pesto Puffs 🌈

Eli isn’t always fussed on lunch, and like a lot of toddlers, he’s going through a bit of a picky phase—especially with vegetables. They often get picked out or end up on the floor 😭

One thing that does seem to work though is pairing veg with foods he already enjoys. If there’s cheese involved, he’s much more likely to give them a go 😸😸

These little puffs are a really easy way to keep offering veg in a low-pressure way. Even if he doesn’t eat all of it, it’s still a great way to keep that exposure going. They’re also perfect for lunchboxes or picnics 🧺

Ingredients (makes 6 puffs)

  • Puff pastry - roll out pastry and cut 6 out circles using a cutter

  • 1 tbsp green pesto

  • A variety of rainbow veg - Sweetcorn, sliced olives, sliced red pepper, sliced green pepper, finely chopped tomato

  • Cheese for the topping

Method

  • Heat oven to 200c.

  • Place the pastry circles on a lined baking tray.

  • Divide the pesto equally on the bases of the tarts.

  • Add the veggies. Top with cheese.

  • Bake in the oven for 12-15 mins.

They keep for around 3 days in an airtight container. Alternatively, you can freeze them.
