Almond Crusted Fish Fingers 🐠🐟

This week I am focusing on wheat free. Fish fingers are usually coated in flour and breadcrumbs. These fish fingers are coated in buckwheat flour, which is naturally wheat and gluten free. The crust is purely blitzed almonds, which gives the fish fingers a lovely crunchy crust.

Ingredients (makes 4-6 fish fingers)

  • 1 large fillet of cod, skin removed

  • 1 tbsp buckwheat flour (ensure label says gluten free)

  • 1/2 egg, whisked

  • 3 tbsp flaked almonds, slightly blitzed in a magimix blender until you get fine 'bread crumbs'

Method

  • Cut fish into strips.

  • Dip fish in the flour, followed by the egg, followed by the almonds.

  • Cook in the air fryer (fry mode- approx 210c) for 10 mins. Alternatively, you can cook them in the oven.

I served these with sweet potato chips, peas, mayo with gherkins 👌👌

You can freeze the fish fingers (uncooked)
