Cheddar, Olive and Honey Focaccia Muffins 🧀
I’m always on the hunt for new lunchbox ideas for Eli, and these are a winner. They’re perfectly savoury with a hint of sweetness and made with simple, wholesome ingredients. I’m also slightly addicted to them 😆
Ingredients (makes 6–8 muffins)
Wet ingredients
1 egg, whisked
35ml olive oil
75ml whole milk
5 olives, thinly sliced
Dry ingredients
75g wholemeal flour
75g grated cheddar
1½ tsp baking powder
1 tbsp za’atar (or oregano)
Honey, for drizzling 🍯
Method
Mix all the wet ingredients together.
Gradually stir into the dry ingredients until combined.
Spoon into greased muffin tins.
Bake at 200°C for 15–17 minutes.
Drizzle with a little honey once out of the oven.
Delicious hot or cold, and they freeze well too.
