4 Ingredient Date and Peanut Cookies πŸͺπŸͺπŸ₯œ

These must be some of the easiest and most nutritious cookies I make 😍

I am always trying to include more nuts in Eli’s diet, and baking with peanut butter is such an easy way to do it!

Reasons why I love these cookies

Dates provide fibre and natural sweetness, as well as small amounts of minerals including iron.

Wholemeal flour provides fibre and some iron.

Eggs are an excellent source of protein.

Peanut butter is rich in protein and healthy fats (each cookie contains around 6g of peanut butter!).

They contain no added sugar.

Ingredients

  • 70g wholemeal flour

  • 1 large egg

  • 60g pitted dates

  • 60g peanut butter

Method

  • Blitz everything in a food processor ( I blend the mixture until the dates are in small pieces).

  • Make 10 cookies and place on a lined baking tray.

  • Cook in the oven (180c) for 10 mins.

  • Allow to cool before eating.

  • They should keep in an airtight container for 3-4 days.
