Wheat and Dairy Free Banana Pancakes π
Pancakes are usually a winner with kids. Theyβre easy to make and can be really nutritious. These pancakes are fluffy, sweet, and moreish ππ
Buckwheat is naturally gluten and wheat free and provides fibre, protein, magnesium, and antioxidants.
Pancake recipe (makes 8β10)
1 very ripe medium banana (mashed)
90g buckwheat flour
1Β½ tsp gluten-free baking powder
1 tsp cinnamon
120ml dairy-free milk
1 egg
30ml oil
Method
Mix the egg, oil, mashed banana, and milk in a bowl.
Gently fold in the dry ingredients.
Avoid overmixing, as this can make the pancakes dense.
Heat a little oil in a pan.
Cook in batches for 2β3 minutes on each side until golden.
We served ours with a drizzle of honey, chopped dried fig, banana, and yoghurt with coconut.
These can be frozen once cooked, but are best eaten fresh π¬
