Wheat and Dairy Free Banana Pancakes 🍌

Pancakes are usually a winner with kids. They’re easy to make and can be really nutritious. These pancakes are fluffy, sweet, and moreish πŸ‘ŒπŸ‘Œ

Buckwheat is naturally gluten and wheat free and provides fibre, protein, magnesium, and antioxidants.

Pancake recipe (makes 8–10)

  • 1 very ripe medium banana (mashed)

  • 90g buckwheat flour

  • 1Β½ tsp gluten-free baking powder

  • 1 tsp cinnamon

  • 120ml dairy-free milk

  • 1 egg

  • 30ml oil

Method

  1. Mix the egg, oil, mashed banana, and milk in a bowl.

  2. Gently fold in the dry ingredients.

  3. Avoid overmixing, as this can make the pancakes dense.

  4. Heat a little oil in a pan.

  5. Cook in batches for 2–3 minutes on each side until golden.

We served ours with a drizzle of honey, chopped dried fig, banana, and yoghurt with coconut.

These can be frozen once cooked, but are best eaten fresh 😬

Considerations

  • Buckwheat is naturally gluten free, but always check labels if cooking for someone with coeliac disease.

  • Some children may experience digestive symptoms when eating buckwheat, particularly if they’re not used to higher-fibre foods.

  • Baking powder doesn’t naturally contain wheat, but some brands may use wheat starch, so check labels if needed.
