Brazil Nut Chicken Curry 🍛 🐔

A nut based curry is an excellent way to get your child to eat nuts! This curry sauce is sweet, mildly spiced and creamy. Brazil nuts are an excellent source of selenium and also provide healthy unsaturated fats, fibre, and B vitamins.

Fresh turmeric contains compounds with antioxidant properties.

Curry sauce recipe (serves 2 adults and 2 children)

  • Oil

  • 1 large onion, finely chopped

  • 4 garlic cloves, crushed

  • 10g ginger, finely chopped

  • 5g turmeric, finely chopped

  • 2 tsp mild curry powder

  • 1 tsp turmeric powder

  • 2 cloves, crushed

  • 1 cinnamon stick

  • 200g Brazil nuts, blitzed into very small pieces

  • 150g fresh tomatoes, chopped

  • 150mls water

  • 1 can full fat coconut milk

  • 1/4 tsp salt

Method

  • Heat a little oil in a saucepan.

  • Fry the onion, with the garlic, ginger and fresh turmeric.

  • Add all the spices and cook for a minute.

  • Add the fresh tomatoes, water, coconut milk, salt and Brazil nuts and bring to the boil.

  • I transferred the sauce to my slow cooker and cooked the sauce on a medium heat for around 6 hours. You will have a delicious thick rich sauce.

  • I served the sauce with roasted chicken and rice. Elias loves this curry so much! I make it in a batch and freeze it in portions.
